Coconut Rice Recipe

Rice is great. Coconut is great. Combine them, and you get coconut rice—basically rice wearing a tropical vacation outfit. This dish is so easy, even your microwave could make it (but don’t test that theory).
What Is Coconut Rice
Coconut rice is white rice cooked in coconut milk instead of water. It’s fluffy, slightly sweet, and tastes like a beach day without the sand in your shoes.
Prep Time
- Prep: 5 minutes
- Cook: 20 minutes
- Total: 25 minutes
- Servings: 4
Ingredients
- 1 cup jasmine rice (or long-grain rice)
- 1 cup coconut milk (use the canned kind, not the drink)
- 1 cup water
- 1/2 teaspoon salt
- 1 tablespoon sugar (optional, for extra sweetness)
- 1 teaspoon shredded coconut (for topping, optional)

How to Make Coconut Rice
- Rinse the rice
Wash the rice under cold water until the water runs clear. This stops it from turning into a sticky mess. - Cook the rice
In a pot, mix rice, coconut milk, water, salt, and sugar (if using). Stir once, then bring to a boil. - Simmer like a pro
Once boiling, lower the heat, cover the pot, and let it cook for 15 minutes. No peeking—rice hates surprises. - Fluff and rest
Turn off the heat, leave the lid on, and let it sit for 5 minutes. Then fluff with a fork like you’re giving it a tiny massage. - Serve
Top with shredded coconut if you want extra flair. Works great with grilled chicken, fish, or eaten straight from the pot (we won’t judge).

Final Tip
If your rice is too wet, blame the coconut milk. Just cook it a bit longer with the lid off. Too dry? Add a splash of water and pretend it never happened.
Enjoy your tropical escape in a bowl! 🌴
