    Instructions

At 76–78°F / 24–26°C, this is often about 4–6 hours from starter incorporation and approximately 40–50% growth—not doubling. The surface should be smoother and aerated, the edges rounded or slightly domed, bubbles visible at the sides and beneath the surface, and the dough cohesive, elastic, gently jiggly, and able to release with strength. At 70–72°F / 21–22°C, expect slower fermentation and often about 50–60% rise; at 80–82°F / 27–28°C, end closer to about 30–40% rise because fermentation continues more aggressively.
    7. Preshape and rest. Turn the dough onto a clean unfloured or very lightly floured surface. Preshape it gently into a round without pressing out all the gas. Rest uncovered for 20–30 minutes. It is ready for final shaping when it has relaxed enough to extend without tearing but has not spread into a flat puddle.
    8. Shape a taut boule. Lightly flour the top, turn the dough over, fold the edges inward, and roll or drag it into a round with even outer tension. Do not tear the skin or squeeze out all the gas. Place it seam-side up in a rice-floured banneton or towel-lined bowl and cover.
    9. Cold-proof the loaf. Refrigerate at 37–40°F / 3–4°C for 10–16 hours. Bake directly from the refrigerator. If the refrigerator is warmer than 40°F / 4°C, shorten the proof because fermentation will continue more quickly.
    10. Preheat, score, and bake. Place a 5- to 6-quart Dutch oven on the center rack and preheat at 475°F / 246°C for 45–60 minutes. If bread bottoms usually burn, place an empty heavy sheet pan on the rack below the pot. Turn the cold loaf onto parchment, brush away excess flour, and make one decisive curved score about 1/2 inch / 1.3 cm deep at a 30–45° angle. Lower the loaf into the hot Dutch oven, cover, immediately reduce the oven to 450°F / 232°C, and bake for 20 minutes.     Notes

    1. Use an established, predictably active starter. Creating a starter from flour and water is a separate multi-day process.
    2. Do not rely on the float test as the deciding starter-readiness test. Doubling, aeration, a domed or just-flattening top, clean fermented aroma, and a webbed interior are more useful together.
    3. The 15 g reserved water is part of the 73% maximum-hydration formula, but it is optional in execution. Stopping without it produces a valid 70% hydration dough when the flour absorbs less water.
    4. All-purpose flour can be used only as a controlled accessibility adjustment. Withhold the reserved water, expect a potentially tighter crumb, and judge strength before adding more water.
    5. Bulk fermentation is complete only when the rise range agrees with aeration, rounded edges, bubbles, elasticity, cohesion, and jiggle. Do not wait for doubling in the canonical 76–78°F / 24–26°C range.
    6. A fourth fold is conditional, not automatically required. Skip it once three sets create sufficient elastic structure.
    7. The canonical proof is 10–16 hours at 37–40°F / 3–4°C. A 24-hour cold proof is not a universally safe extension for this inoculation and temperature range.
    8. Deep crust color and firm structure are primary doneness cues. Internal temperature is supporting evidence only.
    9. The recipe makes one 875 g round boule in a 5- to 6-quart Dutch oven. Different loaf counts, shapes, flour architectures, add-ins, or pan formats require separate validation.
